- 1/4 cup lime juice (about 2 limes)
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1/2 tsp ground coriander
- 1/2 tsp cayenne pepper (optional, for heat)
- 1 tsp salt
- 1/2 tsp black pepper
For the Fajitas:
- 1 ½ lbs (680 g) flank steak or skirt steak
- 2 bell peppers (red, yellow, or green), sliced
- 1 large onion, sliced
- 2 tbsp vegetable oil
- Salt and pepper, to taste
For Serving:
- Flour tortillas
- Fresh cilantro, chopped
- Lime wedges
- Sliced avocado or guacamole
- Sour cream
- Salsa or pico de gallo
- Shredded cheese (optional)
Instructions:
-
Marinate the Beef:
- In a bowl, mix together the olive oil, lime juice, garlic, cumin, paprika, chili powder, coriander, cayenne pepper (if using), salt, and pepper.
- Place the steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, making sure it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
-
Prepare the Vegetables:
- Slice the bell peppers and onion. Set aside.
-
Cook the Beef:
- Preheat a grill or skillet over medium-high heat. Remove the steak from the marinade and discard the marinade.
- Grill or sear the steak for about 4-5 minutes per side for medium-rare, or longer if you prefer it more done. Let the steak rest for 5 minutes before slicing.
-
Cook the Vegetables:
- While the steak is resting, heat the vegetable oil in a large skillet over medium-high heat. Add the sliced bell peppers and onion. Cook, stirring occasionally, until the vegetables are tender and slightly charred, about 5-7 minutes. Season with salt and pepper.
-
Slice the Beef:
- Slice the rested steak thinly against the grain.
-
Serve:
- Warm the tortillas in a dry skillet or oven.
- Serve the sliced beef and cooked vegetables with the warm tortillas and your choice of toppings such as chopped cilantro, lime wedges, avocado or guacamole, sour cream, salsa, and shredded cheese.
Enjoy your flavorful and satisfying beef fajitas!
